Why Is Bone Important ?

While marrow bone broth is produced, water, marrow bones, various vegetables and spices are placed in a pot and cooked at a certain temperature for a certain period of time. The bone broth obtained contains protein, collagen, amino acids, gelatin, vitamins and minerals.

Stock Station Marrow bone broth

Marrow bone broths, until a few years ago, were commonly obtained in both world cuisine and Ottoman cuisine after boiling bones in water for 1-2 hours. The bone marrow juices obtained were adding to the cooked dishes, adding flavor and health to those dishes. However, recent research has revealed that the collagen, mineral substances and amino acids in the bone marrow are largely lost while passing to water with boiling for 1-2 hours. For this reason, Stock Station Marrow Bone Juices are presented to you with a different technique, simmering for 36 hours, without being cooked in low steam, brewed. This technique also allows us to hydrolyze our marrowed bone broth. Stock station bone marrow juices are filled and packaged in our production facility, which has ISO 9001 (Quality Management System) ISO 22000 (Food Safety Management System) certificates, without adding any preservatives and additives, as you prepare in your kitchen.

It is a Natural Flavor Source

Protein What is it and what are its benefits

Protein; They are large molecules that contain amino acids and are necessary for the proper functioning of all cells in our body. All the building blocks of our body such as cells, tissues and organs cannot exist without protein. There is a significant amount of protein in the muscles, skin, skeletal system and many other parts of the body. Protein constitutes approximately 20% of the body by weight. In this sense, the most abundant component in our body after water is protein. Enzymes, hormones, and antibodies are all proteins. Proteins also circulation oxygen in the blood while acting as neurotransmitters (chemical information carriers throughout the nervous system).

Proteins enable cell growth and development, so humans grow and develop thanks to proteins. Since protein is not produced by the body, it must be taken from outside. Protein strengthens muscles, prevents anemia, keeps body resistance high.

Collagen What is it and what are its benefits

It is a type of protein found in human tissues and formed by fibroblasts and cells. Its main task is to strengthen the connective tissue and maintain the integrity of our body. Providing elasticity and firmness to the skin and keeping our joints, tendons and organs together are other tasks.

Collagen loss, which increases with aging, causes joint disorders, cellulite concentrated in the legs and hips, and skin problems. Marrowed bone broth protects you from these problems with the dense collagen it contains. The main reason for knee health problems in elderly people is that the fluid in the knees is lost and cannot be reproduced by the body. Collagen helps to regenerate this fluid. In this way, it strengthens the joints and knees. In addition, collagen helps thrombocyte, erythrocyte and leukocyte cells, which are directly linked to the body's immune system, to reproduce by reproduction. Collagen you take before exercise supports muscle growth. Collagen strengthens the bone structure in babies.

Amino Acids What are they and what are their benefits

The smallest building block of proteins is called amino acid. Amino acids, like vitamins and minerals, help us to stay in good and healthy condition, as well as performing genetic functions such as performing body functions, growing and staying healthy by optimizing micronutrients. There are 20 amino acids in our body.

Gelatin What is it and what are its benefits

Gelatin is a protein product derived from collagen. It has significant health benefits thanks to its unique combination of amino acids. It plays a role in joint health and brain function, improving the appearance of skin and hair.

Vitamin What is it and what are its benefits

What living things need for a healthy life; Organic compounds that cannot be produced by the body and therefore need to be metabolized through foods or supplements are called vitamins.

Minerals What are they and what are their benefits

Minerals are objects that our bodies cannot create alone. It is abundantly available in nature. They are inorganic substances. Although it has a 4% slice in our body, it plays an important role in many functions.

Supplements taken from outside in order for living beings to continue their vital activities are called mineral. Minerals are found in small amounts in the organism structure. However, it must be taken in order to maintain vitality. Minerals; calcium, phosphorus, iron, etc. It is found in intercellular substances.

Why do we hydrolyze our product?

Composed of structural protein functionally, collagen consists of three helical polypeptides and contains hydroxyproline, the essential amino acid. Collagen has eighteen different amino acids in it s structure. Collagen hydrolyzate contains high amounts of important amino acids such as glycine and proline compared to other proteins.

Collagen is broken down into amino acids by the collagen enzyme in the body. This prevents collagen from having positive effects on the skin and connective tissues. Antioxidants (especially vitamin C) prevent this negative effect by inhibiting the collagen enzyme. When collagen hydrolyzate is enriched with antioxidant-rich product groups or consumed together, its effectiveness increases.

Collagen hydrolyzate, on the other hand, is a water-soluble protein hydrolyzate formed as a result of the breakdown of collagen protein by enzymatic or acidic hydrolysis. Collagen hydrolyzate, also known as collagen peptide, contains a high proportion of type I and type II collagen. The molecular weight of collagen is in the range of 2000-5000 daltons on average. Therefore, its digestion and bioavailability is very high.

According to scientific studies; After absorption of collagen hydrolyzate, the first effect is antioxidation and the second effect is biological activity. Collagen hydrosate fully characterizes the bioactive components that have the effect of improving epidermis moisture content, preventing skin aging, regenerating joint and connective tissues. After oral digestion, more than 90% of collagen hydrolyzate is digested and easily absorbed. As a food ingredient, collagen hydrolyzate has been found to be safe to digest.

Collagen hydrosate is more important than collagen and has a higher bio-sensitivity. Sulfuric acid, a very strong acid, is used to hydrolyze collagen and convert it to collagen peptide. It is extracted in hot water and then sterilized.

As a result; While the gelation of the products produced in the cold environment indicates that they contain only collagen, the absence of this gelation in the sterilized products indicates that the collagen is hydrolyzed and transformed into collagen hydrozylate. Collagen hydrolyzate is undoubtedly more beneficial as it is richer in bioavailability.
